Beginning with drinks and pizza by the pool, chefs Chandler Rothbard and German Mosquera from Roots Bistro and Richard Kaplan from Brown Paper Chocolates will collaborate for a 6 course tasting menu with wine pairings from 13 Celsius.

Hors d'Oeuvre:
local mushroom, goat cheese and herb flatbreads
grilled gulf shrimp, chile keffir lime salsa
veal tongue pastrami
kobe bacon rueben sliders on slow dough rye
1st
Broken Salad:
arugula custard, egg yolk confit, olive oil snow, pickled radish and squash
2nd
Fish:
gulf snapper with lemon basil gulf seafood mousse, squash and root vegetable dauphinau, saffron consumme
3rd
Wild Mushrooms:
smoked wild mushrooms, black garlic, white truffle bbq sauce, green bean bouquet
4th
Lobster:
poached lobster tail and claw, knuckle sausage, compressed persimmon, americaine bubbles
5th
Beef:
coriander/curry wagyu flatiron, celery root mash, shell peas
6th
Sweet:
butternut squash creme brulee, cardamom syrup, salted sesame dark chocolate block
Also, everybody is welcome to camp on the farm following the dinner. We have one cottage that has been claimed, but we also have a large center with mats--all you need is a sleeping bag and to be prepared to wake up to a beautiful site.
